Belgium’s strongest beers – they are made using a special process: the fresh brew of Bush and Bush de Noöl, which are the top products of the Dubuisson brewery, is aged by the master brewer for another 6-8 months in oak barrels that were previously used to make the famous Nuits-Saint-Georges wine.
At the end of the maturation, fermentation is restarted by adding brewer’s yeast, and the final – now fourth – fermentation of the beer takes place in the bottle. When the science of beer and winemaking is intertwined in this way, something special is born. Something. which will be appreciated by both beer and wine devotees. Thanks to the unique aging method, the beers are not only enriched with tannins, but also contain the flavors and aromas of the world-famous wine. In the extremely complex and rich taste of the aged version of Bush de Noél prepared for the Christmas holidays, we find a combination of the red fruit aromas of the bor and the nutty-caramel aromas of the beer, which is in perfect balance with the sweetness of the beer, its fine, somewhat lambic-like acidity, and its relatively dry aftertaste.
